My Mom was half German, and my Dad is also half German (although most of my ancestors have been here since the 1700’s to early 1600’s) so I grew up with a version of potato salad most Americans do not understand. It is based on a vinegar dressing without any trace of mayonnaise or bacon! It is totally delicious!!!
Here is the recipe I use:
Saute 1/2 red onion in 1 tablespoon of butter until the onions are almost clear. Remove from the pan and cool to room temperature.
Boil 10-15 small-medium potatoes for 10-15 minutes. Do not allow them to become “soft”. Remove them from the water and allow them to cool off on a platter. Then slice into 1/4 inch slices and place in a large bowl.
Mix together in a separate bowl:
2 tablespoons of Olive Oil
1/3 cup of either Apple Cider or White vinegar (or combine both like I do)
1-2 Teaspoons of Sugar
1 Teaspoon of Salt
A few dashes of Black Pepper
Cayenne Pepper to taste
1/3 cup fresh chopped Parsley
Add cooled off onion to this dressing and allow to sit while potatoes are cooling off.
Pour the dressing over the sliced potatoes and mix gently. I will “chop” up some of the potatoes while mixing with the spoon to make smaller pieces.
Place the potato salad in the refrigerator for at least 24 hours to allow it to marinate.
